Tali or Ashley, I'd say. I voted Tali, but Ashley is okay, too.
I think Tali (especially in ME 2) is harder and with a harsher personality than many people realize. However, that isn't a bad thing. If Tali were just "cute", as her only attribute, then that would be boring. It would be like the ME 1 Liara romance, heh - in ME 1 Liara is endearing, but little more. I like Tali's self-certainty (outside the romantic area), mixture of seriousness and enthusiasm, and her at times dark humour (in ME 2).
As for Ashley, well, I like her wit and temperament. She's called xenophobic very often, but I don't think she is. Just... pro-human. And even then she calls out Terra Firma for being racist. The only annoying parts about her are her poetry tic and her faith - well, not so much the faith itself (seems to be pretty generic "something-out-there-ism", which is okay) but how arrogantly she brings it across ("how can you look out at the galaxy and not believe in something?") I wish Shepard would have been given an option to answer to that... but those are minor points. Generally, I like Ashley's attitude.
Liara is as said somewhat boring in ME 1, and a bitch in ME 2. Jack is... okay. There is something to be said for her. She went through all the hell of her childhood, where she basically was a child soldier, with her will unbroken. So I think there could be more to the relationship than just pity (which would be unhealthy)... still, it's problematic of course. And Miranda... let's just say she's Cerberus and leave it at that...
And the male LI's for FemShep - they all suck. Well, more or less. Kaidan is an okay guy, but as LI? Eh... Jacob is bland as hell, Thane looks for a replacement for his dead wife and will die soon anyway, and Garrus - well Garrus might work, but how they implemented the romance, well... still, it's the best option for FemShep, IMO.

Mira WAS hot. I had a big crush on Mira. She must have been the only person on board, aside from maybe Atton, who I didn't want to slap across the face and tell them to cheer the hell up and get a hobby. I would have turned myself in to Mira any time. Handed her the Merr-son stun cuffs, if you know what I mean. No disintegrations, if you catch my drift. Also on a serious note, I thought Mira was an excellent character - she was very well acted, had a subtle and interesting story, and that sequence where she becomes a Jedi was one of my very favourite bits in the game. www.youtube.com/watch?v=I0lxyzH-Fcs&feature=relatedI think that character really fit the dark, harsh mood of the game. I wish she and Atton could have been the lead characters - the 'Carth and Bastila' of the game. That would have been a hell of a grown-up, old-fashioned Star Wars story. I actually only took Hanharr one time. He was a bit rubbish, if you ask me. Another wookiee, hung up on slavery, yada yada. I like the idea of having a genuine psychopath on board, but... yada yada.

Figuring out which character to have Shepard pursue ended up being more trouble than it was worth. Why can't single-Shepard get any love? ...wait. I went with Ashley in the first game and then stayed loyal to her. I always thought accusations about her "xenophobia" were overblown. And like in that Radiohead song, "I only stick with you because there are no others." In ME2, Miranda was sexy, but that was about it. Also, I doubt Ashley's a Christian. She has too much pre-marital sex for that. She seemed to me to be more vaguely deist--like Antony Flew or David Conway. Or, you know, Tennyson. Go figure!

Ashley, its the only one that didn't seem strange to me. And I like they way she sort of flirted with Shepard right before they got dirty. Liara is my second choice but she, like the rest of them, just seemed awkward and uncomfortable.
And the abrupt "Get to the cockpit" made sense with her. Seeing as she's sort of a hard-ass marine.
Though is was weird for me because she looks a lot like one of my cousins and has the name of another of my cousins.

A bit of a joke on my part. Naturally, just because the church teaches something doesn't mean everyone will listen. Haha. Often quite the opposite. (For the record, though, it is a part of every major denomination--from Catholic to Protestant to Eastern Orthodox) In seriousness, Ashley seemed to lack all the particulars of Christian religion. I give my vote to Tennyson-esque deism.

I don't think the game gives us enough to go on to have a decent guess at the specifics of her beliefs. But I think that fact alone suggests she is very close to modern western Christianity.
