Honestly, the first time I read that Beastmen and Lizardmen existed, I felt like I wouldn't like them or be interested in their lore. I was happy to find out I was horrendously wrong. The Beastmen freakin' own, and the Lizardmen are really cool (and colorful!).
Hot and semi-related take: I love the Empire's lore to bits, but playing them in TW:WH's campaign is probably my least favorite, due to the sheer number of enemies the Empire has, and how much of a choleric nightmare diplomacy was for them before the game was patched.

I suggest the dwarfs, they're amazing. They got the boomsticks, cannons and armour to deal with those nasty grubi and settle a few scores from the book of grudges!
